Jalapeno Popper Chicken Salad

Ingredients:

  • 8 oz Cooked Chicken Breast, shredded

  • 1/2 cup 1/3 less fat Cream Cheese

  • 3 oz Sharp Cheddar Cheese

  • 1/4 cup Plain Nonfat Yogurt

  • 2 Jalapeños, diced

  • 1/2 Red Onion, diced

  • 2 slices Cooked Turkey Bacon, diced

  • Salt and pepper to taste

Directions:

  1. Make sure chicken breast is cooked prior to making this recipe. I cooked chicken breast in the crockpot with some of my favorite seasonings and then shredded it.

  2. In a large mixing bowl, add shredded chicken, diced jalapeños, red onion, and turkey bacon. Mix in yogurt, cream cheese and cheddar cheese until all ingredients are well combined. Add salt and pepper to taste.

  3. Store in the refrigerator for 4-7 days.

I ate this Jalapeno Popper Chicken Salad for lunch this past weekend on lightly salted rice cakes served with baby carrots and Ranch seasoned yogurt dip. Another simple recipe to have prepared for lazy weekends or packed lunches for the week!
